Who runs Corner Roast

Corner Roast is run by Maren Holt, who bakes, and Tobi Asante, who runs the coffee bar. This page has the bakery hours, from the first oven at 3.30 to the dough for tomorrow, and the people we buy from.

The bar and the bakery

Maren Holt trained as a baker in a hotel kitchen and spent six years making bread for restaurants before she opened the bakery. Tobi Asante worked behind coffee bars for ten years and met Maren when he bought her bread for the cafe he managed.

In 2019 they took over the old hardware shop at 1 Alder Street. The bakery is in the back room, where the stock used to be, and the counter is where the till was. You can see the ovens from the window seat.

There are seven of us. Two bake, four work the bar and the counter, and one washes up and makes the jam on Mondays.

Bakery hours

The bakery works a different day from the cafe. This is a normal weekday, from the bakers arriving to the dough for tomorrow.

    Maren and one other baker arrive. The ovens go on and the sourdough shaped last night comes out of the fridge.

    Country sourdough, wheat and rye, and the baguettes. The first loaves are out by 5.30.

    The dough was laminated yesterday. It is cut, rolled and left to prove for an hour.

Coffee from two streets away

Pell Lane Roasters roast our espresso blend every Tuesday in a 15 kg drum roaster. Tobi tastes each batch with them on Wednesday morning before it goes on the grinder. The blend is two thirds Brazil and one third Ethiopia, roasted medium.
